When the chocolate is kept too cold and is then brought to room temperature, the condensation can condense the sugar on top of the product, forming a rough surface called “sugar flower”.

Unless otherwise stated on the label, store the chocolate bought at the store (hopefully black with at least 70% cocoa), packed well, in a cupboard where a fresh temperature prevails.
