They also have a bad reaction when you decide to cool them: they become soft, dull and pasty. When you refrigerate the tomatoes, the membranes of the cell walls are damaged, creating a globally floury texture.

Instead, you should keep this vegetable-fruit very nutritious at room temperature (the temperature of the room in your home), out of sunlight (which may ripen unevenly), with the stem up to minimize bruises.

You can put tomatoes not yet ripe on the window sill. Maintain them in a paper bag (never in plastic bags) to speed up ripening.

Once ripe, the tomatoes should be cooked within 3 days. If they start to get too ripe, it’s time to cook it.
