This is another cruciferous wonder that widely used in southern cuisine. Collard greens are loaded with fiber, protein, and other essential nutrients such as omega 3 fatty acids that help improve joints and boost brain function.
Collard also contains glucosinolates, which are sulfur-containing compounds that help detoxify the body as well as protect it against pathogenic attackers. Indole-3-carbinol is another healing and powerful compound found in collard greens that helps strengthen the body’s defenses against cancer.
