It may seem strange to advise fewer cereals while the industry presents them as ideal foods for health and the Ministry of Health encourages their consumption. The problem of a diet rich in cereals is threefold:

– the cereals are very dense energy: they bring a lot of calories per 100 grams.

– Most of them raise blood sugar and insulin; this is true for refined cereals
(white bread), but this is also true for “full” wheat, raised with baker’s yeast
(bread, biscuits, wholemeal pasta). In so doing, cereals increase the levels Growth factors such as IGF-1, which encourage cells to multiply.

– Cereals are an important source of omega-6 fatty acids that promote inflammation – a factor favorable to tumors.
