Vegetables are a big source of food waste. Food stores and restaurants throw large quantities of veggies and fruits each year; sometimes because they got rotten and others for ridiculous reasons such as the “ugly” shape of the fruit.

Also, people at homes clear their kitchens of large quantities of salad ingredients before and after the making. The numbers of vegetables thrown away are too big that it’s shocking.

Bagged salad is a star of wasteland because of a ridiculous reason: the company that makes them stated that clients often mistake the dates of the selling with the expiration date; therefore when they realize their mistake, they start throwing these in huge amounts.

Salad veggies such as celery, cucumbers as well as iceberg lettuce have a low amount of nutrition among other foods. The reason behind this is that 95% to 97% of these vegetables are made up of water.

For instance, Iceberg lettuce is the least vegetable with nutrients is almost 100% water and contains only small amounts of fiber and potassium, despite being practically one of the symbols of healthy food.

Another example is Frisée lettuce, which is another main ingredient in salads that contains almost 0 nutrients. These veggies are not harmful, but they are not beneficial either; so it would be better to stick to other ingredients such as spinach, squash, and carrots.
