Carrots are super rich in beta-carotene, and they are great for your health because your body has the power to turn beta-carotene into vitamin A. And that is not a concern at all, because there is no such thing as an excess of this vitamin, since your body will convert the beta-carotene into vitamin A gradually, as it needs it.
However, eating too many carrots comes with a risk – you might end up with an excess of beta-carotene on your body, and this can result in a condition called carotenemia, which can turn your skin yellow. As the carotene is processed, that skin coloration will start to fade.
